Poultry Brine

This is a basic poultry brine. This is a the base for a lot of different chicken, turkey and game bird recipes. *For whole turkeys or chicken where no meat is directly exposed increase the salt to a cup

Ingredients
  

  • 1.5 Quart Boiling Water
  • 2.5 Quart Ice Water
  • 3/4 Cup Salt
  • 1/2 Cup White Sugar

Method
 

  1. Add 1.5 quarts of water to the pot along with your salt and sugar. Bring to a simmer without scorching the the sugar. (If you're using this as a start for BBQ Chicken, Lemon Chicken or Thanksgiving Turkey, add your spice bill now now.)
  2. Add 2.5 quarts of ice water to the pot and stir.
  3. Add poultry when cooled.
