Chuck Wagon Beans

My first experience with good chuck wagon beans happened in Austin Texas at County Line BBQ. I think the beans stood out because the BBQ did not. Either way, These make a good side for most any BBQ. I recommend using an old cast iron pot and cooking these beside a campfire or throw them in the BBQ if cooking time permits.

Ingredients
  

  • 1 lb PInto Beans dry
  • 1/2 cup Yellow Onion finely diced
  • 3/4 tbsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Brown Sugar
  • 2 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Celery Salt
  • 1/2 cup Bacon or Salted Pork
  • 1/4 cup Jalapeno finely diced

Notes

Put the beans in a cast iron pot or dutch oven. Cover the beans with water. Bring to a boil and turn off the heat. Let rest for one hour. Set beans aside and discard soaking water.
Cook pork fat (bacon/salt pork) on medium low heat until rendered. Before the pork gets crispy add onion and jalapeno and sweat for 3-5 minutes. Add  remaining spices to vegetables and fold until coated and spices have bloomed. Add beans and fill with water until covered. Reduce to low simmer for 3 hours or until done.
Add water as needed. These beans should not have a lot of liquid.
