Brined Pork Chops

Here's a brine base for Pork Chops and Pork Steaks. From this point we can make sage pork chops or south west. See our other two recipes for additional ingredients.

Ingredients
  

  • 2 Quarts Water 2 cups to boil, 6 cups of ice water to chill
  • .5 Cup Salt
  • .75 Cup Brown Sugar

Method
 

  1. Combine 2 cups water, salt and sugar on stove top and bring to boil. Add other seasonings at this time if needed.
  2. Stir until salt and sugar is dissolved. Remove from heat.
  3. Add 6 cups of ice water and stir until chilled.
  4. Add pork chops and brine for 2 hours, 12 hrs for full loin or shoulder.
