BBQ Chicken

Great BBQ Chicken starts with a basic brine. This recipe will work on all bone in, skin on cuts of chicken. Legs, Thighs, Quarters, Breasts and Wings.

Ingredients
  

  • 1.5 Quarts Water boiling
  • 2.5 Quarts Water ice
  • 1 Cup Salt non iodized

Notes

Add salt and 1.5 quarts of water to pot and raise to a boil. Stir until salt is dissolved. Remove from heat and add 2.5 quarts of ice water.  Stir until ice dissolves. 
*Do not add chicken if water isn't chilled.
Apply an unsalted rub before cooking. Here
