Ingredients
  

  • 10 lbs Pork Shoulder Broken Down in to slabs
  • 32 oz Orange Juice
  • 3.5 oz Achiote Paste El Yucateco
  • 2 Limes Juiced
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Salt
  • 1/4 cup Dried Chopped Garlic
  • 5 oz Dried Guajillo Chiles Stems and seeds removed
  • 7 Puya Chiles Stems and seeds removed
  • 1 Large Onion Halfed
  • 1 Head Garlic
  • 1 Cup Marinate Liquid

Method
 

  1. Breakdown the pork by cross cutting the grain in to two inch thick slabs. Mix the Orange Juice, Achiote, Lime Juice, Red Wine Vinegar, Salt and Chopped Garlic until there are no clumps and marinate over night.
  2. Add Marinated Pork, Chiles, Onion, Garlic and Marinate Liquid to crock pot for 6 hours.
