Smoked Beef Tongue

This is a recipe for smoked beef tongue

Ingredients
  

  • 2 Whole Beef Tongue
  • 1 Gallon Water
  • 12g #1 Curing Salt
  • 328g Kosher salt
  • 100g Sugar
  • 3 tbsp Pickling spice
  • 5 Garlic cloves (crushed)
  • 3 Bay leaves
  • 1 tbsp Black Pepper Corns

Method
 

  1. Make brine solution by combining 1/4 gallon of water and the spice bill. Bring to heat until salt and sugar are dissolved. Add remaining water with ice to cool.
  2. Prepare tongue by rinsing and trimming any nasty bits. Then inject tongue all over with brine solution.
