Fried Chicken

This fried chicken has bold flavor and tang without a ton of spice.
Cook Time 45 minutes
Servings: 6 servings

Ingredients
  

  • 1 Whole Chicken - broken into 12 pieces
  • 1 1/2 Cups Pickle Juice
  • 2 Cups Flour (self-rising)
  • 2 tablespoons Everything Seasoning (we use Genesis Le Bleu)
  • 3 eggs
  • 1/2 Cup Whole Milk
  • 1/2 Cup Hot Sauce (we use Frank's)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 quart canola oil

Method
 

  1. Mix flour & everything seasoning in a bowl or container.
  2. Mix eggs, milk, & hot sauce in a bowl or container.
  3. Heat oil in a cast iron skillet to 350 degrees.
  4. Dip each piece of chicken in the flour and completely coat. Then dip into the milk mixture to completely coast. Finally, one more dip into the flour mixture.
  5. Dip each piece of chicken in the flour and completely coat. Then dip into the milk mixture to completely coast. Finally, one more dip into the flour mixture. Once the oil has come to temperature, put the half of the chicken into the skillet. Cook 7-8 minutes until a dark golden crust forms. Flip the chicken and cook another 7-8 minutes or until the internal temperature reaches 165 degrees.
  6. Remove the chicken and place on a cookie sheet with paper towels and top with a cooling rack.
  7. Cook the second batch of chicken the same as the first.
  8. Remove the chicken and place on a cookie sheet with paper towels and top with a cooling rack.
  9. Serve with your chose of sides.

Notes

Cover the cast iron skillet to avoid the oil from popping.
