This is a basic poultry brine. This is a the base for a lot of different chicken, turkey and game bird recipes. *For whole turkeys or chicken where no meat is directly exposed increase the salt to a cup
Ingredients
Method
- Add 1.5 quarts of water to the pot along with your salt and sugar. Bring to a simmer without scorching the the sugar. (If you're using this as a start for BBQ Chicken, Lemon Chicken or Thanksgiving Turkey, add your spice bill now now.)
- Add 2.5 quarts of ice water to the pot and stir.
- Add poultry when cooled.
