| Make brine solution | Make brine solution by combining 1/4 gallon of water and the spice bill. Bring to heat until salt and sugar are dissolved. Add remaining water with ice to cool. |
| Prepare Tongue | Prepare tongue by rinsing and trimming any nasty bits. Then inject tongue all over with brine solution. |
| Brine 24hrs | |
| Smoke 12hrs | |
| Boil 2hrs | |
| Peel and Chill | |
| Slice thin and package |
