1 Gallon Water
12g #1 Curing Salt
328g Kosher salt
100g Sugar
3 tbsp Pickling spice
5 Garlic cloves (crushed)
3 Bay leaves
1 tbsp Black Pepper Corns

Make brine solution Make brine solution by combining 1/4 gallon of water and the spice bill. Bring to heat until salt and sugar are dissolved. Add remaining water with ice to cool.
Prepare Tongue Prepare tongue by rinsing and trimming any nasty bits. Then inject tongue all over with brine solution.
Brine 24hrs
Smoke 12hrs
Boil 2hrs
Peel and Chill
Slice thin and package
