Salmon Patties – Fresh, Not Canned!

Recipe Description: Fresh Salmon Patties! Salmon Croquettes, the kind made with canned salmon. They're gross! The texture of the fish is destroyed during the canning process. Its the texture of canned tuna and I just can't do it. The only trick to fresh salmon patties it getting them to stick together. We have a trick for that.

1/2 Red Onion - Diced
1 Red Bell Pepper - Diced
2 Cloves Garlic - Minced or Pressed
1/2 Cup Breadcrumbs
1 Large Egg
1/2 tsp Chipotle Seasoning
1/2 tsp Salt
1/2 tsp Pepper

1 Sauté the Onion and Red Bell Pepper in the a non-stick pan until translucent 5 to 8 minutes. Add the minced Garlic and sauté for another minute or so, don't burn the garlic! Move the saute mixture to a bowl and place in the freezer.
2 While the sautéed vegetable mixture is chilling in the freezer start removing the skin and bones from the salmon fillets and mince finely. Add the remaining ingredients, vegetables and salmon in a bowl and mix until well incorporated. Form the patties over plastic film a 1/2 inch thick and slightly larger than the bun. Stack the patties on a plate and put in the freezer for 90 minutes to setup.
3 The patties can be pan fried or grilled. We fix them with a fine cabbage slaw, slice of tomato and tartar sauce. We've also done an Asian Slaw and Saracha Mayo.
**Substitutions - (Red Onion) - White Onion or Sweet Onion can be used instead of Red. If you have a massive Walla Walla Sweet you'll want to use less than half the onion - (Chipolte) - Equal parts Cayanne and Paprika
